The other side goes back to Salamanca, Guanajuato, Mexico—more specifically, to a small farm town, a rancho called La Labor de Valtierra, part of the municipality of Salamanca—where his family is from and where his grandfather ran a mini market and butcher shop. Summers there. Christmas visits there. Family coming and going. People stopping in. Food always close. Community always closer.
His abuelo was known for making the best carnitas in the region. People remembered the flavor, yes—but also the care. The pride. The way he treated food like it mattered because people mattered.
And there was something else from La Labor that stayed with him: the word "vale."
Back home, vale is how people address each other in everyday talk. Like "como andamos, Vale" or "que paso, Vale." It means the person you are talking to. Familiar. Direct. Warm.
That became part of the vision too.
